Pork with Almond Sauce

This is a pretty easy one, but it takes a while.

First off you fry some white bread (50g) and almonds (50g) and then once the bread is golden take it out and set it aside.

Then add the pork (cubed), a large tomato (cut in half), 2 medium onions (halved), a head of garlic (cut in half width ways), a teaspoon and a half of sweat paprika and 400ml of white wine.

Simmer, covered, for an hour.

Then put the bread, almonds, 4 garlic cloves, the tomato, onions and about 4 tablespoons of the liquid into a blender and whiz until almost smooth.

Put it all back into the pot and cook for a further 20 minutes.

    I ate this – it was great.
    Surprisingly light and lovely, looks like masala but doesn’t taste like it, went well with mash and could go well with a spicy couscous. Get home – cook some (or has someone said that already).
