This is for Scrybe who asked for the recipe for that went with this picture. Just bear in mind that I’m translating my mum’s handwritten shorthand notes…
100g chorizo – gently fry without oil. Stir in 4 slices of jamon/parma ham. Remove.
1 red onion (chopped) and 1 garlic clove fried for 10 minutes. Then add a can of tomatoes, 1 teaspoon of paprika, salt and peper and 3 piminente piquillo peppers (chopped thinly). Cook for a further 10 minutes.
Return the meat and add 100g of peas. Cook for 4 minutes and then add a handful of chopped parsley.
Make 4 indentations and crack eggs into them; cover and cook for another 5 minutes.
Top with parsley.
