Pasta for one

A hard night of governoring meant I didn’t get home until gone nine.

And having forgotten to take anything out for dinner before I left for work this morning I was left looking in the store cupboard for what might work.

And pasta with a tomato sauce looked like a good option.

Ingredients

  • 1/2 onion, chopped
  • 1 clove garlic, chopped
  • 4 mushrooms, sliced
  • 1/2 tin of tomatoes
  • 1 tsp caster sugar
  • chili flakes
  • thyme, finely chopped
  • parmesan cheese

Method

Fry the onion and garlic for 10 minutes, add the mushrooms and keep cooking for a few minutes.  Pour in the tomatoes and stir in the sugar, chili and thyme.  Allow to simmer for 10 minutes – while you cook the pasta – and serve.
