Pork and bean salad

This one went down very well with the family. The pork should have been on skewers and then grilled or barbequed, but I forgot to soak the skewers, so we fried the meat instead.

The pork is marinaded in a mix of toasted coriander, cumin and fennel seeds, 4 garlic cloves, salt, smoked paprika, dried oregano, red wine vinegar and olive oil.

The salad had broad beans, butter beans, the zest and juice of a lemon, flatleaf parsley, fresh mint, spring onions, a green chilli, a radish or two, olive oil and flaked almonds.

    Andrew, did you have to post that?!! Now I’m ravenously hungry and will have to go and try to whip something up like this and miserably fail.

    Really all I do is follow the recipe and take the photo. All the rest happens in your head…
