Sausages in Wine

Sausage in Wine

Originally uploaded by Andrew K Brown.

It’s half term and for some reason we all get home knackered; so this very easy Nigel Slater recipe made us a delicious, and slightly different, way of doing sausages with mash.

Lightly brown the sausages, add a finely chopped onion (should have been a shallot but we don’t have those in our cupboard). After a minute or so pour in a glass of red or white wine, and 100ml of stock cover and simmer for 15 minutes.

Then take out the sausages, put a nob of butter in and turn up the heat until the sauce is thickened.

I fucking love this recipe. I consider it a ‘signature’ recipe for me. That’s all you need to know.

Its good, but “all you need to know”? I’m not sure.

Man shall not survive on sausages alone.
